Winemaking

Manually harvested at optimum phenolic ripeness, followed by crushing, de-stemming, added cultured yeasts and maceration for 6 to 7days, then it is drawn off the lees. Pumped over 3 to 4 times daily. Primary fermentation, is followed by racking, light clarification to stabilize the  proteins and subsequent filtration.. Bottling is carried out several times per year to maintain freshness. The wine is cold stabilized to avoid precipitation of tartaric acid and bottled following aseptic filtration.

Giol is the oldest bonded winery in Italy, registered in 1427, and has been organically farming since 1986.

Tasting Notes

An easy-going wine ideal for everyday drinking and pairing with many foods. Its nose  shows very delicate floral notes, which combine nicely with aromas of fresh berry fruit and wild cherry. The well-orchestrated, balanced and slightly tannic palate boasts an . Attractive plush finish. Light ruby red. In the glass, serve at 15-18° C to enhance its freshness excellent wine to accompany pasta with meat sauce, meat-filled crepes, egg pasta, lean meats (preferably white) and light starters. Perfect with pork (sweet and sour), charcuterie and fresh soft of chesses.
