Manually harvested at optimum phenolic ripeness, 50% of the white grapes undergo soft pressure and 50% undergo 10 hours of cryomaceration; fermentation at a constant tempera-ture of 16° - 18° C, and complete malolactic fermentation 8 months in steel vats on the fine lees followed by 3 months of bottle aging.
Light yellow straw color, with grassy tinges.
Inviting fruity aromas, with a delicate nose of apples, pears and apricots. Full round, soft silky texture on the palate, with a merg-ing of summer fruit. Delightful flavors extending into a subtle, yet long finish and perfect balance
An excellent all round go to white wine, and is particularly suited to medium strength cheeses, varied first courses, baked fish dishes.
Best served at a temperature of 10-12°C, 50-54°F
