Hand harvest mid September. Maceration at controlled temperature of 26-28 C for 10 days; pumpover every 6 hours for 15 minutes. Aged in steel vats.
Ruby red color with forest aroma and pleasant vegetal notes. Persistent, warm and full flavored.
Serve with roasted meats, game fowl, mature cheeses and cold cuts of meats.
