Winemaking

Hand harvest early September.  Maceration at controlled temperature of 26-28 C for 8 days; pumpover every 6 hours for 15 minutes.   Aged in steel vats for 5 to 6 months

 

Tasting Notes

Ruby red color with purple tinges, intense and elegant scent, mellow and round taste with good tannins and medium body.

Serve with roasted meats, meat casseroles, fresh and semi mature cheeses.

Serving temperature:  14-16 C
