Varietal: 50% Macabeo, 50% Chardonnay

Vineyard Designation:  Requena, Valencia

Soil: Chardonnay vineyards, chalky stones, calcareous at 820 meters above sea level. Macabeo sandy/stony mix, 730 meters above seal level.  Non Irrigated plots.

Pruning: Traditional & trellis

Yield: 9,000 - 10,000 kg/ha (depending on varietal)

ABV:  11.5%

RS: 7.0 grams/liter

Sulfites:  19 mg/l

Acidity: 0.22g/L

 

Winemaking

During the last week of August, grapes are hand-picked in the

evening to preserve freshness and vinified separately. Ageing on the less for 11 months. The second fermentation in the bottle in the underground cellar.

 

Tasting Notes

Pale yellow with vivid greenish reflections, fine persistent bubbles. Intense aromas of pear and apples, notes of lime and white flowers.

Fresh on the palate with well integrated acidity, leaving long floral tastes.

Wonderful for celebrations, but also pairs with

salads, steamed mussels, crab and light fish courses.

Serving Temperature:  6-8°C / 42-46°F
