The family estate was started in 1875 Farming Bio Dynamically, hand harvested the
Cabernet Franc is whole pressed. Fermented Naturally in stainless steel tanks with nothing added. In the beginning of the cold winter, the large lees are removed and the wine is bottled and place in the cellar. Second fermentation in bottle and cellaring for 1 to 2 years.
Hand turning to allow the sediment to form at the neck. Disgorging and non-dose (adding only the same wine to fill the bottle).
Bright hues of light pink color in the glass. Fresh, fruity, aromas of cherry, red currant and strawberries. Secondary hints of grapefruit and Meyer lemon.
On the palate, fresh and very clean, flavors of cherry, red berries,, round and complex. A lively, dry, yet medium body with an elegant and persistent finish.
Pairs beautifully with cheese, mixed salads, fresh summer dishes, seafoods, oysters, and light pastas.
