Manually harvested at optimum phenolic ripeness,
50% of the white grapes undergo soft pressure and 50% undergo 10 hours of cryomaceration; fermentation at a constant tempera-ture of 16° - 18° C, and complete malolactic fermentation
5 months in steel vats on the fine yeasts followed by 2 months of bottle aging.
Light yellow straw color, with inviting and refined subtle aromas. Recollections of honey and acacia blossom, accented by fresh fruit such as pears and apples.
The freshness on the front palate is pleasing with light acidity, and the full-bodied and smooth texture on the back palate, ex-presses the perfect balance and long flavors. Slight finishing tastes of almonds.
Excellent when paired with Italian style “antipasti”, first courses and cheeses. Best served at a temperature of 10-12°C, 50-54°F
