Winemaking

Vineyard elevation of 600M (2000 ft), Grapes are hand harvested in small baskets from vines averaging 30 years old.  Low yield. Cold maceration, fermentation with skins for 12 days at 27°C .  On the lees for up to 30 days. Malolactic fermentation in tank. Aging for 8 months.

Bottling takes place in February.

 

Tasting Notes

This wine has intense, deep ruby color, intense aromas of ripe red fruit and black cherry. Very well balanced,

explosive deep late pallet flavors of ripe red fruit, notes of anise and pepper.

Serve with mild and ripe cheeses, roasted and grilled meats.

 

Serving Temperature: 18° to 20°C  / 66° to 70°F
