Winemaking

Grapes are hand harvested from a blend of our 6 different plots, of organic vines 25 to 55 years old. Elevation average of 2600 feet above sea level, where the plots run down to above the banks of the Duero River.
The selection is both in the field and in the winery. Open air oak barrels with 500 liter capacity, 2,500 liter capacity open-air stainless steel 21 days of fermentation at temperatures of
25-28°C . Stirred by hand for 4 to 5 weeks to break the cap.
12 months in 85% French Oak 225L. 15% American oak 500L.
Minimum 12 months in bottle.
Tasting Notes
Aromas of intense dark fruits, black cherry, pepper, cedar, and dry herbs. Soft and smooth texture on the palate. Deep flavors of Mellow tannins finishing with long notes of black berries, black licorice, light pepper and eucalyptus, leather, coca and vanilla.
Inky rich color of dark violet and deep ruby lines the glass with elegance. Pair with heavy dishes, grilled meats and sauces.
