Varietal: 100% Sauvignon
Cultivated in Organic Agriculture located in the hearth of Entre-Deux Mers area in the village of Saint Pierre de Bat. Hand harvested. Aged on lees for a month before stabilization. Yeasting with special aromatic white yeasts. Fermentation between 16/17 °C for 14 days. Vinification takes place in thermo regulated stainless steel tanks for one month.
Made from 100 % Sauvignon Gris. Yellow robe with delicate green tints. Aromas of citrus, lemon, lemongrass, asparagus, green pepper and wet stone. Round and supple on the palate, the wine is animated with crisp acidity with spicy lemon, tart apple, and vegetal notes with persistent minerality on the long finish.
Perfect as an appertif, soft cheeses, fish, chicken and grilled
